March Wins! Quinoa Recipes + Learning to Like Breakfast

You know that saying, “Glitter is the herpes of arts and crafts”? Once it’s on you, it never really goes away! That’s kind of how I feel about quinoa! As you probably know, I’m not a very good cook, but I can follow a recipe!

So, I decided to embark on an exciting journey with food. Back in March, I thought it would be a good idea to clean out my pantry and use some of the ingredients I had bought but forgot about. That's when I discovered a bag of quinoa I never got around to cooking!

I had no idea that a small bag of quinoa would turn into so much! It ended up filling five different containers, and I was a bit overwhelmed about what to do with it all. So, I turned to Google for some recipes, and guess what? They turned out to be really good! I did make a couple of tweaks to two recipes since they didn’t hold together quite as well as I expected, but overall, everything turned out great! I found myself getting super creative with my meals!

 

Recipes I Tried in March

Recipe 1: Quinoa Sweet Potato Crab Salad

  • It was supposed to be a quinoa ball that turned into a salad and ended up as a filler for salad wraps. It had many multi-uses.

Recipe 2: Quinoa Egg Scramble

  • These were supposed to be patties, but the mold didn’t stick, so they became egg scrambles.

Recipe 3: Quinoa Avocado Toast

  • Honestly, I love avocado toast and needed a way to get rid of the Quinoa Egg Scramble.

Recipe 4: Quinoa Turkey Meatloaf

  • Surprisingly, this one was my favorite! It didn’t look pretty, but it tasted so good!

Recipe 5: Beet Noodles with Beef

  • This recipe didn’t have quinoa; it was my mini palate break. But omg! I’ll be making this combo again. I really enjoyed the oranges with the beets. It’s such a nice blend.

Recipe 6: Raspberry Honey Parfaits

  • I forced myself to like parfaits. I’m not a yogurt person, but I know yogurt is supposed to be good for your gut. So I mixed this one up with different fruit, and I had some granola I also needed to get rid of.

 

Leraning to LIke Breakfast

I’m not exactly sure what I came across on TikTok, but it felt like every video popped up talking about high cortisol levels. They mentioned that if you’re someone who doesn’t crave breakfast, it might be a sign of high cortisol, and I thought, “Wow, that’s interesting!” So, I decided to give breakfast a try. And you know what? Starting my day with a parfait every morning has made me feel so much better!

I also promised myself to take it easy in the mornings. I created a little ritual where I can enjoy making my coffee and savoring my breakfast in a calming way, and I’m thrilled to say it’s been really wonderful so far!

Of course, some days go smoother than others. There are times when I need to prep the night before, especially if I know the morning will be hectic. But overall, I genuinely look forward to breakfast! I whip up avocado toast now and then, but those days are a bit rare since I need to be in the mood for eggs. I’m not a huge fan of them, but every once in a while, I do get a craving!

 

Final Thoughts

While eating breakfast started as a challenge, it’s slowly turning into one of my favorite routines. I’m eating better, saving money, and honestly—it’s kinda fun. Can’t wait to see what recipes April brings!
